Andy from the Rustic Olive has has been sharing recipes for several weeks now, this time we go healthy and flavorful with a delicious salad!  It's super easy to make and looks very impressive on your table, maybe you'll want to include this in your Easter brunch!

WHAT YOU'LL NEED:

  • 1 -Bag or box organic baby spinach
  • 1/2 Cup- Strawberries Chopped ( Cut into 1/4 pieces or halves.)
  • 1/2 Cup- Rustic Olive White Strawberry/Peach Balsamic Vinegar
  • 1/2 Cup- Rustic Olive Lime Infused Olive Oil
  • 1/8 Cup- Shredded Parmesan or Romano Cheese (add to your liking)
  • 1/8 Cup- Chopped Almonds (add to your liking)
  • - Croutons (Optional)

MAKE IT:

1 part Rustic Olive White Strawberry/Peach Balsamic Vinegar to 1 part Rustic Olive Lime Olive Oil.  I usually mix 1/2 Cup of each inn a mason jar or Tupperware container.

Andy likes having fresh strawberries on this salad too!  It goes well over darker greens like spinach or lighter greens like iceberg lettuce.  He sometimes grates fresh Parmesan or Romano Cheese over the salad to his liking, and you can do the same.  You could add croutons or chopped almonds too.
