Three Reasons My Family Give This Chili Made With Pork Two Thumbs Up
After years of alternating between two family favorite chili recipes, I've found a third. Surprisingly, it's made with hunks of pork and is super easy to make. I found the recipe from Taste of Home and tried it over the weekend. Here's three reason why I think you should try it too.
First of all, besides being easy to make, clean up was a snap because I used the slow cooker liners. It's like a small garbage bag for crock pots that you cook in then just lift out and throw away. If I wasn't so anal I really wouldn't have had to put the crock in the dishwasher, but because I used it, I did.
Secondly, using pork instead of hamburger has been proven to be a bit healthier. You could use ground pork or even turkey, but this particular recipe called for pork cut in 1 inches pieces. I was going to use boneless pork ribs, but got a great price on pork tenderloin, SWEET!
Thirdly, it's made in a crock pot. I browned the pork, threw all the other ingredients in and waited for the house to smell delicious. It's awesome to come home hungry to a delicious smell knowing dinner is already done. Give it a try and let me know what you think.
INGREDIENTS
- 2-1/2 pounds boneless pork, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 can (28 ounce) diced tomatoes, undrained
- 1 can (16 ounces) chili beans, undrained
- 1 can (8 ounces) tomato sauce
- 1/4 cup salsa
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1 tablespoon chili powder (I only used a 1/2 teaspoon because Homie doesn't like it too spicy)
- 1 teaspoon minced jalapeno pepper (be sure to use gloves when handling jalapeno peppers)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne powder (I used cumin instead)
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
MAKE IT
In a large skillet, brown pork pieces in oil and drain. Place in a 5-qt. slow cooker; add remaining ingredients and stir. Cover and cook on high for 2 hours, then reduce the heat to low and cook 4 hours longer. We went 3.5 because my "low" still had my chili bubbling like it was boiling.
