My wife bought some green peppers from the grocery store the other day.  I only needed one of them to cook with, so the other just sat on the counter overnight.  The next day it was yellowish red!  What happened?  I asked our resident foodie at work Steve if he knew.  Here's what I learned.

It turns out all peppers of any color start of green.  The sweet peppers change colors once they mature.  So I really actually had a sweet pepper that was put in the wrong bin at the produce store.

I guess I got a pretty good deal, because we paid the much cheaper price for a green pepper.  Too bad I was alarmed by the color change and threw it out.  I'll know next time!
