They use color, yes color. "Oh Brother, Where Art Thou" was the first to be digitally colored. They made the movie look old and dirty, and it worked, our minds told us it looked old.

The film industry has been doing it for a while. Dressing people in certain colors to make you feel a certain way about a character. When they wanted you to thing the footage was old, they used tea and soaked the negatives in it.
