My husband is notorious for buying bananas and letting them go bad.  Although, lately we buy them and they go bad the next day, what's up with that????  I usually make Chocolate Chip Banana Muffins with them but on a whim I made Banana Bread and my family loved it!  It's easy, make it for a hostess gift or if you have over night guests you can slice it up to serve with coffee the next morning while you make something a little more substantial.

  • 1/2 C. shortening
  • 1 C. sugar
  • 2 eggs, beaten well
  • 1 C. banana, mashed
  • 1 T. lemon juice
  • 2 C. flour
  • 3 T. sour cream (I've also used cream cheese)
  • 1.5 t. baking powder
  • 1 t. salt
  • 1/2 t. baking soda
  • 1 C. pecans or walnuts, chopped (optional)

Cream the shortening and sugar together.  Add eggs and mix well with the bananas, sour cream and lemon juice.  Add the dry ingredients and mix well.  Mix in nuts if you choose to include them.  Bake in a greased 9x5 bread pan at 350 for 50-60 minutes.  You can check to see if it's done by inserting a tooth pick in the middle.  It's done if it comes out clean.  Cool on rack.  This bread freezes well.
