Make A Gourmet Grilled Cheese With Cottage Bacon for National Grilled Cheese Day

Cottage bacon isn't a very common known meat.  Some meat shops offer it, others don't.  I discovered it a while back at Kosher's Kitchen in Gilbert MN and it has become my favorite way to eat bacon.  Just the other day, we made gourmet grilled cheese sandwiches and this time we used cottage bacon.  It's fantastic!

We used chunk colby jack cheese, fried onions, fresh deli white bread, and two slabs of cottage bacon on each sandwich.  Being traditional, we ate it along with tomato soup.   So, I know I've said this before but if you can find cottage bacon, buy it!
