Taste of Home has a great way to get the kids to eat their carrots, make them FRIES!!!  But, that's just their shape.  They are healthy because they are roasted in Olive Oil.  I sprinkled a little cinnamon and sugar on as I pulled them hot out of the oven.  Super easy and unique way to serve carrots!

 

INGREDIENTS

•1 pound fresh carrots, cut into 1/2-inch sticks

•2 teaspoons olive oil

•1/2 teaspoon salt

DIRECTIONS

•Place carrots in a greased 15-in. x 10-in. x 1-in. baking pan. Drizzle with oil and sprinkle with salt; toss to coat. Bake, uncovered, at 450° for 10-12 minutes or until crisp-tender. Yield: 5 servings.

NUTRITIONAL FACTS

1/2 cup equals 53 calories, 2 g fat (trace saturated fat), 0 cholesterol, 299 mg sodium, 9 g carbohydrate, 3 g fiber, 1 g protein. Diabetic Exchange: 2 vegetable.
