I was cleaning the basement this past week-end which meant going through my recipes and moving them and the cookbooks across the room.  I came across a recipe I thought you'd enjoy making & eating because we can only find eggnog at this time of the year.  I got the recipe from Sue, a B105 listener years ago.  Sue, I still have it!!!!  It's easy, yummy and a way to use up that jug of eggnog.According to Wikipedia, eggnog is:

A sweetened dairy-based beverage traditionally made with milk and/or cream, sugar, beaten eggs (which gives it a frothy texture), and liquor. Brandy, rum, or whiskey are sometimes added; and the finished serving would be garnished with a sprinkling of ground cinnamon or nutmeg.

EGGNOG QUICK BREAD  (B105 Listener, Sue Woods)

INGREDIENTS:

2  eggs

1 C.  sugar

1 C. dairy eggnog

1/2 C. melted butter

2 t. rum extract

1 t. vanilla

2 & 1/4 C. flour

2 t. baking powder

1/4 t. nutmeg

DIRECTIONS:

Beat eggs in large bowl, then add sugar, eggnog, butter, rum and vanilla extracts, blending well.  Add to that mixture, the flour, baking powder, and nutmeg.  Stir until moist.  Pour into greased loaf pan and bake at 350 for 45-50 minutes, using the toothpick method to make sure it's done.  Insert the toothpick into the middle of the bread, if it comes out clean, it's done.  If it comes out with some of the moist batter clinging to it, cook it a couple more minutes, watching it carefully.  Continue with that process until you get a toothpick that comes out clean.  ENJOY!
