This last weekend, a group of friends and our families got together for a weekend at the lake.  We cooked all of our meals over the fire, and one of them was the classic "Hobo Dinner."  I was suprised that several of them had never heard of a "hobo dinner."

I learned how to cook Hobo dinners while on trips with my Uncle John.  It's a simple meal that you can cook with just a few ingredients relatively easy.  Here's what you need:

Aluminum Foil

Onion

Carrots

Ground Beef

Bacon (optional)

First, take out a large sheet of aluminum foil.  Lay it flat and fill one side with diced potatoes, carrots, and onion.  Lightly salt and pepper the vegetables.   Next take the ground beef and form a patty over the top of the carrots and potatoes.  Lightly season this again.

We then sprinkled chopped bacon over the top.  YOU MUST PRE COOK THE BACON.  Otherwise it won't cook all the way over the fire.  If you don't want the hassle it will still be good without bacon.  (Or just add bacon bits or pre cooked bacon.)

Form the aluminum sheet into a packet, sealing in the contents.  You'll be cooking this over a fire, so you don't want it to break open.  You'll want the campfire to be down to coals, to cook it slower and more even.  Usually I cook it about 20 minutes on each side, then check it.  If the potatoes are cooked, you're good to go!
