Delicious Strawberry Summer Salad Recipe From Taste of Home
The taste of this salad is incredible! I was leery…a vinaigrette on strawberries? Surprisingly yummy!!! And extremely healthy and calorie free, especially when I substituted Splenda for the sugar. One note….we were planning on skipping the green onions because I was lazy….but, in the end, I didn’t and you shouldn’t either…it enhanced the flavor, perfectly!
7 cups torn romaine
2 cups sliced fresh strawberries
2 celery ribs, finely chopped
2 green onions, finely chopped
1/4 cup canola oil
2 tablespoons sugar ( I used Splenda for less calories)
2 tablespoons cider vinegar (I used Rice Vinegar, it’s milder)
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce ( I used a couple drops of Tabasco
1/2 cup slivered almonds, toasted (optional)
In a large bowl, combine the romaine, strawberries, celery and onions. In a small bowl, whisk the oil, sugar, vinegar, salt, pepper and pepper sauce. Pour over salad and toss to coat. Sprinkle with almonds. Yield: 8 servings.
