The day started out normal enough.  We ran like we do on weekends and my Homie headed off to do construction at a friend's house.  I thought I'd surprise him by making dinner (trust me, that is a HUGE surprise in this house) and chose to make my Crock Pot Lasagna.  I grabbed my cook book entitled "Recipes To Warm The Heart" from my church in Carlton, the J.M. Paine Memorial, flipped it open to my recipe and started my grocery list....then, it HIT me.  I needed to make a formal apology.

Crock Pot Lasagna

What you need:

  • 1 (10 oz) package of noodles (I use Rotelle because I can't find the little lasagna shapes anymore)
  • 1 medium onion, chopped
  • 1 (12 oz) container, small curd cottage cheese
  • 1 lb ground beef
  • 1.5 lb Italian sausage
  • 1 (8 oz) can tomato sauce
  • 12 oz shredded mozzarella cheese
  • 1 can Hunt's spaghetti sauce (I use garlic and herb)
  • Mushrooms, diced green pepper, black olives, all optional

Make it:

Cook the noodles according to directions on package.  Brown the meats and drain.  Mix all other ingredients together, then add the browned meat and mix well.  Layer noodles and meat mixture in crock pot alternately.  Cook for 6-7 hours on low or 3-5 hours on high, stirring occasionally.  For easy clean up I use a crock pot liner.
